Waimea Valley has lots to eelebrate this summer. A newly restored amphitheater, the return of its summer concert series and the reopening of The Proud Peaeoek Restaurant after a renovation that extended the bar, removed some booths to create more open space and added fresh, locally grown produce to the menu. Newly appointed Executive Chef Andy Dalan is a graduate of the Kapi'olani Community College Culinary Arts Programand was chef at Yogurstory when it won Honolulu Star-Advertiser's 'Ilima Award for best new restaurant in 20 1 1 . gourmet iee cream. Hours are from 5 to 10 p.m. Thursday, Friday and Saturday, with happy hour from 5 to 6 p.m. The restaurant is open for brunch on Sunday from 10 a.m. to 2 p.m. Reservations are not required, but parties of eight or more are asked to eall ahead at 638-5864.
